INGREDIENTS
- 15 ounces tomato sauce
- 1 cup full fat coconut milk
- 1/3 cup red curry paste
- 1 tsp Coconut Sugar or 1/4 tsp liquid stevia
- salt & pepper as desired
- 1 lime juiced
- 30 ounces chickpeas drained and rinsed
- 2 packages Vee Tee Basmati Rice
- fresh herbs for garnish
INSTRUCTIONS
- Add all ingredients from tomato sauce through salt/pepper to a medium pan and mix
- Set pan over medium heat
- Add in chickpeas
- Allow curry sauce and chickpeas to come to a slow simmer
- Cook for about 5 minutes or until heated
- Add in lime juice and mix
- While curry sauce is heating microwave your basmati rice
- Evenly divide basmati rice between 5 meal prep containers
- Place the rice on one side of the container and the chickpea curry on the other side of the container
- Top with fresh herbs
- Store in the refrigerator for up to 5 days
