INGREDIENTS
15 ounces tomato sauce
1 cup full fat coconut milk
1/3 cup red curry paste
1 tsp Coconut Sugar or 1/4 tsp liquid stevia
salt & pepper as desired
1 lime juiced
30 ounces chickpeas drained and rinsed
2 packages Vee Tee Basmati Rice
fresh herbs for garnish
INSTRUCTIONS
Add all ingredients from tomato sauce through salt/pepper to a medium pan and mix
Set pan over medium heat
Add in chickpeas
Allow curry sauce and chickpeas to come to a slow simmer
Cook for about 5 minutes or until heated
Add in lime juice and mix
While curry sauce is heating microwave your basmati rice
Evenly divide basmati rice between 5 meal prep containers
Place the rice on one side of the container and the chickpea curry on the other side of the container
