This Brazilian Beans and Rice dish could not be easier or more delicious. It it only takes a few simple ingredients and less than 30 minutes!
I was inspired to make this dish a couple weeks ago when I wanted to make something fun for the World Cup. My husband visited Brazil several years ago and mentioned that he loved the sausage there, as well as the beans and rice… so I ran with that suggestion. I wanted to make it as easy as possible and so I came up with this recipe.
Ingredients (with Amazon Links)
- 2 Tbsp. oil
- 1 Lb. smoked sausage sliced
- 1/2 c. chopped green onion
- 3 cloves garlic minced
- 1 c. rice
- 2 c. chicken broth
- 1 14 oz can pinto beans, drained and rinsed
- salt & pepper to taste
- 1-2 bay leaves
Instructions
- In a large skillet, heat oil over medium heat.
- Add sausage, green onion, and garlic and saute until onions become soft.
- Stir in rice, chicken broth, beans, salt & pepper, and bay leaves and bring to a boil.
- Reduce heat to a low simmer and cover. Simmer for 20-25 minutes or until rice is done.
- Remove from heat and fluff rice with a fork.
